Respited Writing

 I've taken quite the break from this blog. Being sick since the beginning of the year is probably the biggest excuse I've got. Hopefully I'm in the clear for a while! I guess there's a price to pay for working with adorable, germy kindergartners.

 
This was one of the projects we did for Martin Luther King, Jr. Day. I taught the kids about who Dr. King was and what he fought for. One of the little 5-year-olds started crying after I read his story. I couldn't believe how much the kids empathized. We made peace and equality signs out of different colors of scrap paper as one of our celebration activities. 

 This was my first stab at making a ginger bug and later my own carbonated beverage! It was an easy process, but my carbonation was a little lacking. I'll have to experiment to make it stronger.

I was sooo pleased with the color and taste of this! I mixed the ginger bug with my own concoction of pomegranate herbal tea, lemon juice and fresh pineapple juice. Mmmm. 

 And, lastly, here is some of what we've been eating lately. Trying to keep it fresh and healthy. 
Mexican chicken over rice with avocado and tomato garnish. 

Spring rolls with ground pork, broccoli slaw and a sesame oil/coconut amino dressing. 

This roasted squash soup recipe I got from my sister-in-law is s SO good! The recipe yielded enough for several days of leftover lunches, too.

Recent Events

It's been almost a month since my last post. Time has flown and looking on my phone I have not taken nearly enough pictures! 

Here's a look at some of what the end of 2013 and beginning of 2014 brought our way. 
Ry took another licensing exam. He's so close to finishing this process and I couldn't be any prouder of him.

Big sister flew in for little sister's wedding. We held off all Christmas celebrations until Lauren got home. As per tradition, all three sisters wore our striped Christmas socks.

The beautiful bride and matron and maid of honor. Kara's wedding was a blast! P.S.- she and my mom made her headpiece. It was one of several homemade items that turned out amazing for both the ceremony and reception.
