Reasons Behind The Recipes

I've been taking advantage of my free time this summer to do a lot of reading and, as it may appear, a lot of trying new recipes. I was recommended the paleo diet, so I got out a book on it. It's a pretty big jump from being a vegetarian. I've been giving it a go, and in the meantime, reading more about the effects food can have on the body. These are some of the books I've read/am reading:
Not just because I have free time and a comfy zero-gravity lounging lawn chair (thanks in-laws!) for summer reading, but I've got no shortage of reasons to take a serious look at how food impacts my body. For starters, I'm the only one (ptl!) in my immediate family who has never had an appendage removed because of infection. I don't like the probability there. On both sides of the family tree is a history of autoimmune diseases. I take it seriously, especially paired with my hatred lack of enthusiasm for going to any doctor. So I read, and I bake, and I cook, and I buy weird new foods and shop at new places and make changes constantly.  So glad to have a flexible husband who eats and cooks this weird new stuff alongside me!  

Tonight he made me this: 
Spinach and Soba Noodles. 
Well, it was supposed to be soba noodles, until I read that the main ingredient was wheat flour, followed by buckwheat flour. For me, gluten is still out, but buckwheat is (I'm going to sound so smart here) a "grain-like seed" so, though not the strictest of paleo, it does not contain gluten. Why would they mix it with gluten-containing wheat flour? Bummer.  Anyway, the picture on the left is what I ended up eating, rice noodles, while Ry ate the soba noodles, both with the same sauce and add-ins. Rice noodles? I know... not the strictest of paleo either, but I am not following paleo to a T; I'm pulling all my resources together to find the best combo for me.
